
ArktiskMat Roadshow - Arctic Food Stories in Berlin
Welcome to the ArktiskMat roadshow and the journey into the heart of Northern Norwegian food and adventure. It will be an immersive experience for all senses, intertwining flavours with stories that paint a vivid picture of the region's authenticity. The roadshow is divided in two parts and locations: we start off with a mini symposium, followed by a delicious pop-up dinner.
This event is a proud participant in the Cultural Capital Bodø2024 and the Grüne Woche (IGW) program for Northern Norway, aligning with the overarching theme of sustainable agriculture and food production.

Anne Margaretha is a third-generation reindeer herder with a versatile background ranging from meat production at Saltfjell Rein, acting and Duodji (Sámi handicraft). At the roadshow she will give us some insight about the Sami culture, and the establishment of Saltfjell Sàmi Adventure.

“Skreið - the fish that wanders”, Tørrfisk fra Lofoten
Similar to the Vikings a thousand years ago, today's Arctic Cod continues to be captured in the wild outside the enchanting islands of Lofoten. The cod is subsequently converted into a delicacy through the traditional method of air-drying and maturation. Tørrfisk from Lofoten will share the story of the traditional stockfish, and its journey to become an internationally renowned and protected product.

Elise will share her knowledge about the quality and growing of root vegetables in a cool Nordic climate. She will also tell the story and vision behind the company Art Nord and some of their exciting collaborative products in the north.

«Growing up Cold; a vision of Arctic Cuisine», by Lars Petter Suikkari
Lars Petter Suikkari grew up in the far north of Norway, in a Saami town called Guovdageaidnu/Kautokeino. After deciding to become a cook as a young adult, his journey has taken him to several fine-dining establishments in Europe and the United States. He is currently the Sous-Chef at Ett Hem in Stockholm, and he will share stories about growing up in the north and the regions potential as a gastronomic destination.

Part2: ArktiskMat Pop-up at Fjord Restaurant
When/where: 7:00 - 11:00 PM/Fjord Restaurant, Eisenacher Str. 86
A pop-up dinner will take place at Fjord restaurant, featuring chefs from Northern Norway and Germany. The collaborative six-course dinner will highlight the chefs' distinctive qualities as they create dishes with Arctic ingredients such as, scallops, reindeer, cloudberries and stockfish. This will provide an opportunity for the chefs’ to learn from each other and explore the potential of Northern Norwegian cuisine. Dinner will include a selection of delicious wines or alcohol free beverages.

Marius Martinsen,
Til Elise fra Marius
Marius and his partner Elise bought the farm Utskarpen in 2015 and the concept "From field to table" was born. In the restaurant Fra Marius, Marius is in charge of the food concepts. All his life he has gathered knowledge and experimented med ingredients in order to find the best flavours. Even a simple dish should be nothing short of perfect! He has previosley worked at Restaurant Oro in Oslo and at Haga restaurant, which had a star in the Michelin guide. Marius was also been a member of the Norwegian National Chef Team, but chose to dedicate all his time to the project at Utskarpen.
Joachim Gerner,
Facil
Gerner is the head chef of the two-star restaurant, FACIL, located at The Mandala Hotel in the Berlin-Mitte district. FACIL has since 2001 evolved to become a genuine jewel in the Berlin's culinary landscape. The guests can experience culinary art at its finest while they unwind in a pleasant atmosphere and enjoy the undivided attention of the restaurant staff. Gerner started his career in 2000 in Switzerland as gardemanger, entremetier and saucier at the five-star hotel Grand Resort Bad Ragaz. In 2003 he moved to Berlin to start at the former star-restaurant Quadriga. Since 2006 he’s been a part of the FACIL family, working closely with Culinary Director Michael Kempf.
Dalad Kambhu,
Kin Dee
Dalad Kambhu was born in Austin and raised in a foodie family in Bangkok, sparking her curiosity for flavours at a young age. After leaving Thailand for New York, Dalad began taking jobs in local restaurants and quickly fell in love with the world of hospitality and gastronomy. In 2013, she co-founded OMAR’s, a private dining club in the West Village. After Dalad began working as a consultant in hospitality, she joined forces with artist Rirkrit Tiravanija, cooking side-by-side. Together, they shaped their vision for a joint restaurant, and in 2016 chose Berlin as their project’s birthplace. In partnership with the renowned Grill Royal Group, Kin Dee opened their doors in February 2017, serving contemporary Thai cuisine, cleverly combining seasonal and regional products with original Thai flavours. In 2019, Dalad was rewarded her first Michelin star, making her one of only ten female chefs in Germany to share this honour.
Vegard Stormo,
Scandic Narvik
career as a chef. He grew up outdoors - gathering, hunting, fishing, and enjoying all the ingredients nature has to offer. Vegard also has Sami roots and has been a keen learner of Sami culture and human’s intrinsic bond with nature. His goal is to pass this knowledge on to his guests and staff to increase local understanding. Vegard has worked at Scandic Narvik since 2018, and in 2020 he won the prestigious award “Årets kjøkkensjef» (head chef of the year) in Norway. One his core values as a chef is to respect the ingredients and love the nature we depend on. He focuses on good, short-distance ingredients, sustainability, the environment, and of course happy guests and employees.
Lode van zuylen
Lode&Stijn
Lode van Zuylen and Stijn Remi, originally from the Netherlands, began their culinary journey together in the same restaurant thirteen years ago. They traversed through Amsterdam, Maastricht, Prague, Stockholm, Hamburg, and San Francisco before finally settling in Berlin, where they established their own restaurant. In their restaurant, the chefs prioritize the use of seasonal, sustainable, and artisanal products. Their emphasis is on working with high-quality, seasonal ingredients, leading them to adopt a produce-driven approach to cooking. The culmination of their skills, extensive experience, and creative flair allows them to craft a dining experience that is both refined and casually enjoyable.
Kenneth Gjerrud,
Fjord
After finishing his apprenticeship in Norway and Paris, Kenneth moved to Berlin in 1994. He got to know the city’s gastronomy scene through star restaurants such as Intercontinental, Hugos and Bamberger Reiter. In 2001 he opened his first restaurant Munch's Hus, at the time the only Norwegian restaurant in Germany. In 2004 he also started as Head Chef at the Nordic embassies, where he is still successful today. In 2022, he and his partner Angelika Koryluk Skål opened the wine bar Skål. In 2023 Kenneth opened Fjord restaurant in Schöneberg showcasing the Nordic cuisine.
