Mikael Svensson and Will Moffat

Mikael Svensson is the Executive Chef and Owner of the two Michelin-starred and Michelin Green Star restaurant Kontrast in Oslo. Raised in southern Sweden, he developed an early respect for nature, ingredients, and the connection between food and community.

After working at some of Scandinavia and Spain’s most acclaimed restaurants, he founded Kontrast in 2013 with a mission to combine world-class gastronomy with responsible sourcing and minimal waste. Today, Kontrast is known for its hyper-seasonal approach, with around 98% local ingredients and menus that evolve with Norway’s climate.

At the core of Kontrast is a deep focus on sustainability: preservation techniques such as fermenting, pickling, curing, and in-house production of ferments, sauces, and garums are central to the kitchen, with all food waste composted.

Joining Mikael is Will Moffat, founder of b.culture. After a 20-year international hospitality career across five countries, Will shifted his focus toward fermentation and sustainable food development. His collaboration with Kontrast led to the creation of b.culture, a project dedicated to transforming byproducts and underutilised ingredients into unique fermented products, now distributed internationally.
