Jakob Zeller & Ethel Hoon

We are delighted to welcome Jakob Julian Zeller and Ethel Hoon to ArktiskMat!

Their culinary journey has taken them through some of Europe and Asia’s most inspiring kitchens – from Barcelona, Paris, Hong Kong and Tokyo to Fäviken in Jämtland, where they first met. Jakob worked as Assistant Head Chef and Head of R&D under Magnus Nilsson, while Ethel worked across every station before becoming Sous Chef.

From 2019 to 2023, they ran Klösterle in the Austrian Alps. In 2025, they opened Pramol Alto in South Tyrol – a long-envisioned project rooted in their shared love of nature, cooking and a strong sense of place.

Their cuisine is deeply connected to its surroundings, built around regional ingredients and close relationships with farmers and producers. At the same time, their cooking reflects the techniques, traditions and influences they have gathered throughout their careers and travels.

In 2026, Pramol Alto was named Gault&Millau Newcomer of the Year.

At ArktiskMat, Jakob and Ethel will share their approach to cooking with a true sense of place. They will also demonstrate their Deep-fried Char with “Furikake”, bringing together local Arctic char with inspiration from Japanese and Chinese culinary traditions.
