William Sloan
William was born and raised in Steigen. After finishing upper secondary school, he was planning to head off to art school. However, as part of the Covid generation, he failed an exam, meaning the doors to art school would have to wait for another year.
Having spent his entire life in the Arctic, William moved to Oslo to retake the exam as a private candidate. While studying, he started working at @danielslakter and @annis.oslobukta, where he discovered a new passion: butchery. Three and a half years later, William is almost finished with his apprenticeship and has developed a real passion for the craft of sausage making.
Now he’s heading north to Mosjøen, where he’ll be spending time with the students at Restaurant and Food Studies. William will give the students a hands-on introduction to sausage making, sharing his knowledge, techniques and passion for the craft.
For this lunch, William is bringing “Bangers” from Annis Pølsemakeri. Together with the students, he’ll be putting an Arctic twist on the British classic Bangers & Mash — working with local ingredients and Arctic flavours to create something of their own.
